Trying to add more millets to everyday meals? This jowar (sorghum) millet upma is nutritious, filling and naturally rich in fiber. I also added paneer for extra protein, making it perfect for breakfast, lunchbox or a light dinner.

Ingredients
• ½ cup broken jowar (sorghum millet)
• Around 2½ cups water
• ½ cup paneer cubes
• 1 small onion, chopped
• ½–1 cup mixed vegetables (carrot, beans, peas etc.)
• 1 tbsp ghee (for roasting millet)
• 1 tbsp oil
• 1 tsp mustard seeds
• Few curry leaves
• 2-3 tbsp peanuts
• ¼ tsp turmeric powder
• ½ tsp chilli powder (adjust)
• Salt to taste
• 1 tsp Sambhar masala
Method
1. Heat 1 tsp ghee and roast broken jowar millet until slightly golden and aromatic. Keep aside.
2. Heat oil in a pan, add mustard seeds, curry leaves and peanuts. Roast until peanuts are crisp.
3. Add chopped onion and sauté until soft.
4. Add turmeric and chilli powder and sauté briefly.
5. Add mixed vegetables and cook for 1–2 minutes.
6. Add ½ cup roasted millet and mix well, Add 1 tsp sambar masala
7. Pour around 2½ cups water, add salt and mix.Add paneer cubes.
8. Cover and cook on low flame for 10-12 minutes until millet becomes soft.Switch off the gas and let it rest for 3-4 minutes.
9. Add little lemon juice and finish with a little ghee on top.
Serve warm and enjoy this healthy millet upma.
