Mediterranean Chickpea Salad Recipe
Ingredients:
• 1 can chickpeas (garbanzo beans), drained and rinsed
• 1 large cucumber, chopped (about 1 cup)
• ½ cup cherry tomatoes, halved
• ⅓ cup bell pepper, diced
• ¼ cup olives, sliced
• ½ small red onion, sliced into semi-circles
• Small bunch cilantro, chopped (1/3 cup)
Dressing
• 1 tbsp lemon juice
• 1 tbsp balsamic vinegar (can replace with wine vinegar)
• 1 tbsp honey
• 2 tbsp olive oil
• 1 garlic clove, minced
• Salt & pepper to taste
Instructions:
Drain and rinse the chickpeas.
Chop the cucumber, cherry tomatoes, bell pepper, olives, red onion and cilantro.
Add all salad ingredients to a large bowl.
In a small bowl, whisk together lemon juice, balsamic vinegar, honey, olive oil, garlic, salt and black pepper.
Pour the dressing over the salad and toss gently to combine
Serve fresh and enjoy!
