Bring a pot of water to a boil and add salt. While the water warms, get a bowl of ice water ready. Put the broccoli florets in the boiling water for just a minute. Then, scoop them out with a slotted spoon and then plunge them into the ice water. This stops the cooking process. Once the florets are cool, drain well and pat dry with a paper towel before tossing with the other salad ingredients.
