Marry Me turkey meatballs with sun-dried tomatoes and basil served over creamy lemon rice that soaks up every bit of flavor.
INGREDIENTS:
For the Meatballs
1 lb 93% lean ground turkey
½ cup oil-packed sun-dried tomatoes, drained and finely chopped
½ cup fresh basil, finely chopped (plus more for garnish)
1 teaspoon dried oregano
1 teaspoon kosher salt
½ teaspoon black pepper
½ teaspoon garlic powder
Olive oil, for rolling
For the Lemon Rice
1 tablespoon olive oil
4 garlic cloves, minced
2 tablespoons nutritional yeast
2 teaspoons dried oregano
½ teaspoon kosher salt (plus more to taste)
1 cup jasmine rice, rinsed
2 cups low-sodium chicken broth or vegetable broth
¾ cup full-fat coconut milk
Juice of ½ lemon
DIRECTIONS:
1. Bake the meatballs
Preheat oven to 400°F.
Line a sheet pan with parchment paper.
In a large bowl combine the ground turkey, sun-dried tomatoes, basil, oregano, salt, pepper, and garlic powder.
Mix gently until combined.
Rub olive oil on your hands and roll the mixture into 1 tablespoon-sized meatballs.
Place on the prepared sheet pan and bake 10–12 minutes, until lightly browned and cooked through (internal temp 160°F).
2. Cook the lemon rice
Heat olive oil in a large sauté pan or Dutch oven over medium heat.
Add garlic, nutritional yeast, oregano, and salt and cook 1 minute until fragrant.
Stir in the rinsed rice, broth, and coconut milk.
Bring to a gentle boil, then reduce heat to medium, cover, and simmer 10–13 minutes until the rice is tender.
Turn off the heat and stir in the lemon juice.
Taste and adjust salt if needed.
3. Serve
Spoon the lemon rice into bowls.
Top each bowl with 4–5 turkey meatballs.
Finish with fresh basil and a sprinkle of nutritional yeast if you like.
