Jeera Rice:
Heat ghee till hot. Add jeera — let it splutter. Toss in curry leaves. Add washed rice and sauté till every grain is coated in ghee and fragrance. Add water, cook till done. Simple. Unforgettable.
Matar Paneer:
Marinate paneer, green peas, onion, tomato with mustard oil, red chilli powder, coriander powder, turmeric and salt. Rest for 30 minutes. Cook in ghee with cumin and garam masala — medium flame, then high. Finish with cream and coriander.
Papad Chuda:
Roast the papad. While hot, drizzle ghee, dust red chilli powder, scatter fresh coriander. That’s it. That’s the side dish that steals the show every single time.
