It’s Test It Tuesday and this week I decided to experiment a little.
I had some leftover smoothie and thought… could I turn this into a quick healthy grab-and-go breakfast muffin?
So I mixed it with a few pantry staples, baked them in my mini muffin tray and honestly… they turned out pretty good!
They probably could have used another minute or two in the oven, but they’re a great quick breakfast or snack idea, and you could easily add fruit to change up the flavour.
What I used
• Leftover smoothie
• Flaxseed meal
• Psyllium husk
• Coconut
• Baking powder
• Egg
• Protein powder
Mixed together and baked in a mini muffin tray at 173°C for about 15 minutes.
Healthy, simple and convenient for busy mornings.
