Can you tell these beets have been in my fridge for longer than I’d like to admit? No? Exactly. If you’re too lazy to go to the store but you refuse to waste food, this is the most “forgiving” recipe you will ever need to know.

I took some leftover quinoa (or “kin-noa” if you’re feeling fancy), those month-old beets, and every herb I had left to create a total rescue mission for my tastebuds. No measurements, no 2016-style perfection…. just pantry staples like olive oil, lemon, mustard, and honey.

It’s proof that a good dressing can fix almost any kitchen mistake. It came out insane!

Key Ingredients:
Leftover cooked quinoa
Packaged beets (the older the better… maybe)
Olive oil, Lemon, Mustard, Honey, Fresh herbs

What is the “oldest” thing currently living in your fridge? No judgment, I clearly win with the beets.
