Paneer tikka potato cheese wrap!
I know the name sounds handful but this recipe is so so fun!!! And unique (even though everyone on the internet made it 4 months ago lol)
Is it easy to make? Yes.
Is it also super healthy? No. But a def one you SHOULD TRY OUT!
For the potato
Youll need 3-4 large potatoes, sliced thin with a mandolin or you can use a knife like I did.
Now place them on a greased baking paper: and spread them out thin, which each slice crossing over the other vertically and horizontally.
Season with salt and pepper and a little oil
Place in a preheated oven for 20 mins.
And then remove, grate processed cheese or mozzarella+ cheddar mix on top and bake again for 12-15 mins. (Time might differ by 5-10 mins either way depending on how thin the potatoes are)
Let it rest for 5 mins and then flip it over for the filling.
Paneer tikka filling:
In a bowl, mix together
1 cup hung curd, 1 tbsp Kasturi methi, 2 tsp green chilli paste, 2 tsp ginger garlic paste, 1/4 tsp turmeric, 1 tsp garam masala, 1/4 tsp amchur, 1/2 tsp chaat masala, 1 tsp cumin coriander powder, 2 tbsp besan, 2 tbsp hot mustard oil and salt.
Add 1 cup cubed paneer to it and marinate it for 30 mins.
Cook on a non stick pan for 5 mins till done!
Now assemble the wrap with other fillings of your choice – I used arugula, lettuce, tomatoes, onions and the paneer!
Roll it up tightly and enjoy!!
