I neglected my starter for an extra month this time to see how it would impact the result. I’m talking 1:1:1 feedings once every other day… tons of time in the fridge… it even had a layer of clear hooch on it before I fed it for this bake.

The biggest difference is not taste but texture (at least for me).

The acidic loaf was moist and gummy, while the healthy loaf was light and airy. Results will vary based on the maturity of your starter, I’m sure – a super new/young starter that is also neglected will undoubtedly produce a much worse result.

I kind of want someone to ship me some of their starter (if they are having issues) so I can do this test again… I just feel like no matter how much I neglect Gertie, she still comes back and does a pretty good job. #sourdoughbread #sourdoughstarter #sourdoughexperiment
