Blueberry Protein Muffins 👇
Ingredients
• ⅓ cup tapioca flour (or any gf flour)
• ¼ cup whey protein powder
• ⅓ cup brown sugar (or any sugar)
• 1 tsp baking soda
• 1 ripe banana (mashed)
• 2 eggs
• ⅓ cup low-fat Greek yogurt
• ¼ cup low-fat milk
• 1 tsp vanilla extract
• 2 tbsp melted butter
• ¾–1 cup blueberries
Instructions
1. Preheat oven to 350°F.
2. Mix dry:
• tapioca flour
• protein powder
• brown sugar
• baking soda
3. In another bowl mash banana, then whisk in:
• eggs
• yogurt
• milk
• butter
• vanilla
4. Combine wet + dry.
5. Let sit 3–5 minutes (important for texture).
6. Gently fold in blueberries.
7. Fill muffin tin ¾ full.
8. Bake 18–22 minutes.
9. Cool completely before removing.
