Ingredients (serves 6)
∙ 2 tbsp oil
∙ 2 onions, chopped
∙ 2 carrots, chopped
∙ 2 stalks celery, chopped
∙ 2 cloves garlic, crushed
∙ 2 kumara, chopped
∙ 1/4 cup tomato paste
∙ 4 cups water
∙ 2kg mussels in the shell, washed
∙ 2 tbsp lemon juice
Method
∙ Heat oil in a large pot
∙ Add onion, carrot and celery, cook over a low heat until soft
∙ Add garlic, kūmara, tomato paste and water and bring to a simmer, cook for 30 minutes
∙ Add mussels and cover with a lid, bring to a simmer and cook until all the mussels have opened
∙ Mix through lemon juice.
Tip
∙ Discard mussels that are open before cooking
∙ Discard mussels that don’t open after cooking.
