Today I’m showing you how to make my Vegan Tzatziki Recipe as well as an easy vegan falafel that is made with canned chickpeas and baked or air fried. You could also fry them for even more flavor and texture. Both recipes are SUPER HEALTHY with no extra junk in them and only a few whole food ingredients. The full ingredient list is below and of course, the step by step recipe is included in the video. I suggest making the falafel when you are meal prepping as it only takes a few minutes and freezes really well, making it a quick ready-made main dish to add to a bowl, make a pita sandwich with, or pair with sides. These falafel are also oil free and gluten free.

FALAFEL INGREDIENTS:
2 Cans of Chickpeas
Juice of 1/2 a lemon (or more to taste)
1 Bunch Parsley
1/2 Bunch Cilantro
1/4-1/2 cup Chickpea Flour (start with 1/4 cup and add more if necessary)
1.5 tsp cumin
1/2-1 tsp salt (start with 1/2 tsp then taste and adjust)
1/4 tsp black pepper

TZATZIKI SAUCE INGREDIENTS:
1 single serve container plain of vegan yogurt (I used Kite Hill)
1 mini cucumber or 1/3 of a normal cucumber
Squeeze of lemon juice
1 tsp dry dill or 2 tsp fresh dill (add more to taste)
1/2 tsp salt
a few shakes of pepper
