The perfect “Light Monday” breakfast

I have the ideal start for your Monday, especially when you want something light but deeply nourishing after a busy weekend.

Let’s be clear: this isn’t a full-calorie meal for every day. It’s a strategic choice for those mornings when you need to reset after a heavy weekend, but still want to fuel your body with high-quality nutrients.
It literally takes 3 minutes to put together, and you’re ready to go.

What’s in my bowl:
The Base: I’m using a fermented coconut yogurt with 8g of protein and 8g of healthy fats per 100g. It has zero added sugar and almost no carbs, providing the same satiety as Greek yogurt while keeping the breakfast completely plant-based.
The Crunch: Puffed quinoa for that perfect texture — and it’s naturally gluten-free.
Antioxidant Boost: Blackberries and papaya for a massive dose of Vitamin C, fiber, and polyphenols to support your metabolism.
Smart Fats: Pine nuts and pistachios for brain fuel to kickstart the work week.
The Detail: A touch of pine honey and fresh mint for a little dopamine hit without the sugar crash. You can easily swap the honey for any sweetener of your choice, but I personally love the unique aroma of this pine honey.

100% Vegan & Gluten-Free

It’s a smart balance of proteins, healthy fats, and complex carbs. No heavy feeling, just pure energy to get things done.
