Spicy veggie eggs and crispy toast

1. 2-3 tablespoons Oil
2. 1/4 onion diced
3. 1/4 tomato diced
4. 1/2 jalapeño diced
5. 1/4 teaspoon Salt / pepper
6. 1/2 teaspoon paprika , cumin
7. 2-3 eggs whole or scrambled
8. Thick sourdough bread
9. 2-3 tablespoons cheddar cheese
10. Garnish cilantro or parsley

1. Add oil to a pan . When low to medium heat add the toast to one side and onion, tomatoes, jalapeños to the other side. Mix and Let cook .
2. After about 1-2 minutes add the salt , pepper, cumin , paprika and mix.
3. Drop in the whole or scrambled eggs.
4. You can sprinkle salt/ pepper on the eggs if you like.
5. Cover with a lid to cook. Flip the toast .
6. After a minute add cheddar cheese and cover again to cook.
7. Garnish with cilantro or parsley.
8. Serve eggs over the toast.
