Ingredients (2 Servings)
For the sautéed veggies + paneer:
Paneer – cubes
Garlic – chopped
Mixed vegetables (your favourites)
Salt
Red chilli powder
Black pepper
Oil – light brush
For the tikki:
Onion – chopped
Spinach leaves – chopped
Boiled potato – mashed
Salt
Black pepper
Ghee – for shallow cooking
For serving:
Dressing – as mentioned in Recipe 59
Step-by-Step Instructions
– Brush a pan lightly with oil. Add garlic, your favourite vegetables, salt, red chilli powder and black pepper.
– Add paneer and cook everything well till slightly golden. Keep aside.
– In the same pan, brush a little oil again. Add onion, spinach leaves and boiled potato.
– Season with salt and black pepper. Cook well.
– Shape this mixture into tikkis.
– Heat a pan, grease lightly with ghee and cook the tikkis from both sides till crisp and golden.
– Plate the sautéed veggies, place the cooked tikki alongside and add the dressing from Recipe 59.
– Enjoy this complete, balanced lunch.
