Starter: 100g (Lievito Madre)

Water: 1 1/3 cups / 330g (room temp)
Salt: 1 tsp / 10g
Proofing:
Room temp until doubled OR Cold proof (fridge) for 12 hours for better flavor.

465°F (240°C) — 15 mins with steam.
390°F (200°C) — 10-15 mins no steam (until golden).
