– 4 cups cubed eggplant or zucchini
– 4 bacon slices
– 1 cup chopped onions
– 1 tbsp minced garlic
– 1 tbsp minced jalapeño
– 1 tbsp chili powder
– 1 tsp ground cumin
– 1/2 tsp sea salt
– 1/2 tsp oregano
– 1/8 tsp cayenne
– 6 oz chorizo (optional)
– 2 tbsp pork lard or avocado oil
