One weeks worth of highcarb vegan meal ideas for breakfast, lunch and dinner!
Oatmeal/raisin cookies:
3/4 cup rolled oats
small handful of raisins
5 tbsp. hot water
1 ripe banana (mashed)
1 tsp cinnamon
1 tsp vanilla
1/2 tsp baking powder
Mix everything well together. Shape into cookies and bake for about 15 min. at 200 degrees C.
Blueberry/banana bread:
100g buckwheat flour
1 large banana mashed
1 tsp baking powder
1 tsp cinnamon
1 tsp vanilla
1/2 cup water
1/2 cup frozen blueberries
Mix all dry ingredients. Add banana and water, and mix until it becomes a fluffy batter. Gently (!) fold in blueberries. Add to a small loaf pan and bake for 30 min. at 200 degrees C.
