Ingredients:
-2.5 lbs Boneless Skinless Chicken Breast (1134g raw)
-6 Tbsp Soy Sauce (90mL)
-2 Tbsp Honey
-1 Tbsp Hoisin Sauce (15g / 15mL)
-1 Tbsp Rice Vinegar (15mL)
-1 Large Onion (200g)
-2 Bell Peppers (300g)
-4 tsp Minced Garlic (20g)
-2 tsp Ground Ginger (4g)
-1 cup Chicken Broth (240mL)
-2 Tbsp Cornstarch
-2 Tbsp Water
-1/3 cup Cashews (45g)
-5 Green Onions (75g)
-1/2 tsp Black Pepper
-2 cups Uncooked White Rice (400g)
-1 Tbsp Sesame Seeds
Instructions:
1.) Add diced chicken, sauces, vinegar, onion, peppers, garlic, ginger, broth, half the cashews, and pepper to crockpot. Cook high 3–4 hrs or low 5–6 hrs.
2.) Stir in cornstarch slurry and remaining cashews; cook high 15–20 mins until thickened.
3.) Cook rice separately.
4.) Stir in most green onions. Serve over rice, garnish with remaining onions and sesame seeds.
5.) Store 4–5 days (freeze longer); reheat with a splash of water.
