Tired.
Not the dramatic sort. Just ordinary, everyday, parent-life tired.
The kind where your hair has its own agenda, the house is a bit chaotic, and cooking feels like one task too many.
I’ve learned that those are often the days I need proper food the most.
Food with fresh flavours that remind me to slow down, refuel and look after myself.
Tonight’s dinner was homemade pork burgers topped with fresh basil pesto, served with skin-on potato wedges, garden rocket and bright pink pickled radish.
Most of the salad came from my garden, but honestly, a lot of it could be grown on a windowsill.
When I’m tired, processed food is tempting. Fresh food asks a little more of me, but it always gives more back.
Feed your body. Enjoy the flavours. Then get some sleep.
🌱 Pork Burgers
500g pork mince
2 eggs
2 slices bread or sourdough, blended into crumbs
🌱 Basil Pesto
Handful fresh basil
2 tbsp pumpkin and sunflower seeds
½ block Parmigiano Reggiano
Olive oil
Pine nuts
Blend until smooth.
🌱 Served with
Rocket salad
Pickled radish
Skin-on potato wedges
(Parboil the potatoes first if you’ve got the energy. If not, just crack on and air fry them anyway.)
Tired people still deserve good food.
