Mango-Pineapple Popsicles

This recipe makes 8 small popsicles

Ingredients:
1 cup diced mango (170 g)
1/2 cup diced pineapple (85 g)
juice of 1 lime

1. Add all the ingredients into a blender
2. Pour into popsicle molds
3. Let set in the freezer for about 4 hours
4. Store in an air-tight container in the freezer

Strawberry Glace Popsicles

This recipe makes 8-10 small popsicles

for the strawberry glace:
5 fresh / frozen strawberries
juice of 1/2 small lemon

for the popsicles:
1/2 cup frozen strawberries (80 g)
1/2 cup frozen raspberries (65 g)
1/4 frozen banana
1/2 – 3/4 cup milk of choice, if using fresh berries & fruit, add less milk (120 – 180 ml)
optional: 1 scoop vanilla protein powder
1/2 date

for decoration:
vanilla yogurt/skyr

1. First make the strawberry glace: blend together strawberries and lemon juice. Set aside
2. Then blend all the ingredients together for the smoothie
3. Decorate the popsicle molds with the yogurt and strawberry glace. Pour the smoothie into the molds
4. Freeze for 4-5 hours and enjoy
5. Store in an airtight container in the freezer

Pistachio Popsicles

This recipe makes 8 small popsicles

Ingredients:
1 cup full fat Greek yogurt (240 ml / 250 g)
1/2 cup pistachios, roasted and unsalted (about 85 g)
2 – 3 tablespoons honey or maple syrup
1/2 teaspoon lemon zest

Toppings:
melted chocolate of choice
crushed pistachios

1. Add all the ingredients into a blender and mix until smooth
2. Pour into popsicle molds. Let set in the freezer for about 4 hours
3. Top with melted chocolate and crushed pistachios
4. Store in an airtight container in the freezer
