🧀 Spicy Masala Cheese Slices

• ½ litre milk
• 1 tbsp vinegar
• ¼ tsp salt
• ½ tsp oregano
• ¼–½ tsp chilli flakes
• 1½ tsp agar-agar powder
• 2 tbsp + ½ cup whey (strained milk water)

Heat the milk and add vinegar to curdle it slightly. Strain and reserve the whey. Blend the curdled milk with salt, oregano, chilli flakes, agar-agar, and 2 tbsp whey water until smooth. Transfer to a pan, add ½ cup whey water, and stir for 2-4 mins until thick and glossy. Spread in a tray, chill until set, and cut into slices.
