🥗🧆 Crispy Flattened Air-Fried Chickpea Salad ✨
A fresh, colorful salad topped with crispy flattened chickpeas. Crunchy, flavorful, and packed with plant-based protein—perfect for a light lunch or healthy dinner 😋
Ingredients
For the Crispy Chickpeas:
1 cup cooked chickpeas, drained and patted dry
1 tsp olive oil
1/2 tsp paprika
1/2 tsp cumin powder
1/4 tsp garlic powder
Salt and black pepper to taste
For the Salad:
1 cup cucumber, diced
1 tomato, diced
1/4 cup red onion, sliced
A handful of lettuce or spinach
Fresh coriander or parsley
Juice of 1/2 lemon
1 tsp olive oil
Salt and black pepper to taste
How to Make
1️⃣ Drain and pat the cooked chickpeas dry. Transfer them to a zip-lock bag and spread into a single layer. Using a rolling pin, the bottom of a plate, or a heavy pan, gently flatten most of the chickpeas.
2️⃣ Transfer the flattened chickpeas to a bowl and toss with olive oil, paprika, cumin powder, garlic powder, salt, and black pepper.
3️⃣ Arrange the chickpeas in a single layer in the air fryer basket and air fry at 200°C (390°F) for 12–18 minutes, shaking the basket halfway through, until crispy and golden.
4️⃣ In a large bowl, combine the cucumber, tomato, red onion, lettuce (or spinach), and fresh coriander (or parsley). Toss with lemon juice, olive oil, salt, and black pepper.
5️⃣ Top the salad with the warm crispy chickpeas and serve immediately while they’re still crunchy ❤️
