The recipe uses a short autolyse, enriched dough and proper proofing to produce a loaf that rises beautifully, slices cleanly and stays soft for days.

🍞 METHOD

🔥 KADHAI / STOVETOP METHOD
If you don’t have an oven, a heavy kadhai is the next best option.
• Use a heavy aluminium or cast iron kadhai.
• Add a 1–1½ inch layer of salt or sand to the bottom.
• Place a metal stand or ring on top.
• Cover and preheat on medium heat for 20–25 minutes.
• Place the loaf pan on the stand and cover tightly.
• Bake on medium-low heat for 40–50 minutes.

A kadhai creates an enclosed baking environment similar to an oven and generally produces better bread than an air fryer.

❄ STORAGE
Allow the loaf to cool completely before wrapping.

Store:
• At room temperature for 3–4 days, wrapped in cling film or a bread bag.

For longer storage:
• Slice and freeze.
Toast directly from frozen.
Avoid refrigerating, as bread stales faster in the refrigerator.
