Hearty Lentil Stew + Dark Chocolate Cacao Crispy Treats (snow day vegan recipes)
Arrow Head Mills Puffed Rice Cereal:
Hearty Lentil Stew Recipe (vegan):
1 sweet onion
2 cloves garlic
2 stalks celery
2 carrots
2 medium sized potatoes (I used yukon gold)
2 cups kale
1 & 1/2 cups lentils
4 cups vegetable broth
1 cup water
1 tsp turmeric
1 tsp thyme
1 tsp rosemary
2 bay leaves
salt and pepper to taste
Dark Chocolate Cacao Crispy Treats Recipe (vegan):
(makes 14)
3 T coconut oil
1/2 cup cacao powder
1 T tahini (or any nut butter)
1 tsp cinnamon
1/3 cup maple syrup
1 tsp vanilla
sea salt
2 & 1/2 cups puffed brown rice cereal (or puffed quinoa would work too)
Add all of the ingredients (except for the puff rice cereal) to a small sauce pan. Cook on low-medium heat until everything becomes a thick chocolatey mixture. In a separate bowl add the puffed rice cereal followed by the sauce. Stir until evenly mixed. Pour into muffin/baking cups and freeze for about 1 hour. Enjoy these treats cold. Keep in the freezer.
