Ingredients

Oats & Potato Waffles With Stir Fried Vegetables:

For Waffle:
• 75 gms Oats
• 200 gms Potato
• Salt To Taste
• 1 tsp Black Pepper To Taste
• 1 Spring Onion Greens
• 25 gms Cheddar Cheese
• Mixed Herbs
• Water

For Stir Fry:
• 20 Mushrooms
• 1 Broccoli
• 12 Cherry Tomatoes
• 1 Red Bell Pepper
• 1 Spring Onion
• 1 tbsp Soya Sauce
• 1 tsp Rice Vinegar
• 1 tbsp Coconut Sugar
• Salt To Taste
• Black Pepper To Taste

Method

For Oats & Potato Waffles
1. Boil the potatoes with the skin on.
2. Once it is done, drain and cool them. Remove the skin and Grate the potatoes.
3. In a bowl, add the grated potatoes along with rest of the ingredients and Mix it well.
4. Now add water at intervals so that we get a nice thick batter.
5. Apply butter on both sides of the waffle machine, scoop a ladle full of the batter and put it in the machine.
6. Let it cook on both sides until crisp.
7. In a plate, place the waffle, top it with the stir fry vegetables and Serve these with Greek Yoghurt.
8. Ready to Eat and Serve it Hot!

For Stir Fried Vegetables
1. Mix the water, soya sauce, coconut sugar, black pepper and keep it aside.
2. In a pan add butter, olive oil. garlic, onions, mushrooms and Sauté them on a high flame.
3. After 5 minutes, add the blanched broccoli, cherry tomatoes along with red capsicum.
4. Sauté on high flame for about 2 minutes.
5. Now add the sauce we prepared earlier and Cook the vegetables for another 2 minutes or until the sauce is all soaked up by the vegetables.
6. Serve these veggies with the Oats and Potato Waffle made.
