🍪 High Protein Oatmeal Cookies — Basically A Granola Bar In Cookie Form!

These cookies are loaded with oats, nuts, and seeds, naturally sweetened with honey, and topped with a chocolate disc for that perfect finishing touch! Think of it as your favourite energy bar, but way more fun to eat! 🥜🍫

Ingredients:
1.5 cup oats
1/4 cup walnuts
1/4 cup almonds
1/4 cup pumpkin seeds
1/4 cup sunflower seeds
1/4 cup peanuts
1 tbsp flax seed powder
3 tbsp luke warm water
1/3 cup honey
3 tbsp peanut butter
1/4 tsp cinnamon powder
1/8 tsp salt

Method:
Roast the oats, nuts, and seeds. Chop the walnuts, almonds, and peanuts into small chunks

Mix together the flaxseed powder and lukewarm water, and let it rest for 5 to 10 minutes until it turns gelatinous (flax egg)

Add the oats, chopped nuts, and seeds into a bowl

Add in the peanut butter, honey, and the prepared flax egg. Season the mixture with cinnamon powder and salt

Mix everything together. Wet your hands with water and scoop out small balls from the mix, shaping them into cookies as shown in the video

Place the cookies on a lined baking tray and bake at 350°F for 15 to 20 minutes or until lightly golden

Once the cookies cool down, garnish with melted chocolate and set them in the refrigerator for 30 minutes. Enjoy!
