Today’s video is a LOW CALORIE LUNCH video as well as I took a few minutes to review my new Balance Athletica clothing.
These zucchini taco boats were AMAZING and I was extremely impressed. If you are not a zucchini fan that is okay! You can season these however way you’d like and add as many peppers/veggies to this mixture and I promise you will enjoy them.
I am all about sharing my tips and tricks with you guys so I thought these little videos would come in handy in helping you all get a little creative with your diet and in helping you make some healthier choices.

You can make this lunch a little lower calorie by using low fat cheese/no cheese as well!
I seasoned my mixture and zucchinis with taco seasoning and parm! Mrs Dash would work really well too.
Preheat the oven to 350 degrees, and line a pan with parchment paper. Bake for about 18-25 minutes! Watch this video for the rest 🙂
Approximate calories for one (will vary based on amounts of ingredients used) are: 41 calories 2.5c/1.5f/4.6p
