Makes 4 wraps
Ingredients
2 peppers, deseeded and finely sliced
1 onion, finely sliced
2 garlic cloves, crushed
200g canned lean ham, visible fat removed and diced
1 tsp ground cumin
½ small pack fresh coriander, roughly chopped
6 eggs
½ red chilli, deseeded and finely chopped
Place a non-stick frying pan over a medium-high heat. Add the peppers, onion, garlic, ham, cumin and a little water. Stir-fry for about 5 minutes then put the mixture in a bowl and scatter over the coriander. Cover with foil and keep warm.
Wipe the pan with kitchen paper and spray with low-calorie cooking spray.
Lightly beat the eggs in a large measuring jug and stir in the chilli. Pour one-quarter of the egg mixture into the pan and tilt it around to cover the base. Cook for 1½ minutes on each side or until the edges turn golden then loosen with a palette knife and slide on to greaseproof paper. Repeat to make three more omelettes.
Spoon the fajita mix on to the omelettes, roll them up and serve with a big salad.
Instead of the canned ham, add mushrooms, tomatoes, cooked chicken, or prawns to the fajitas. Or use the ‘omelettes’ to replace wraps or bread, filling them with canned crab meat and salad, smoked salmon, rocket and fat free cottage cheese – or any other Free ‘sandwich filling.
These also make a brilliant alternative to spring rolls – fill with stir-fried vegetables and meat.
