Ingredients

* 2 cups sabudana (tapioca pearls), soaked
* 2 medium potatoes, diced
* ½ cup roasted peanuts
* 2 tbsp ghee or oil
* 1 tsp cumin seeds
* 2–3 green chilies, chopped
* Curry leaves
* Rock salt (sendha namak) or salt to taste
* ½ tsp black pepper powder
* Fresh coriander leaves
* Juice of ½ lemon

Recipe

1. Wash the sabudana well and soak for 5–6 hours or overnight.
2. Heat ghee or oil in a pan and add cumin seeds.
3. Add green chilies and curry leaves; sauté for a few seconds.
4. Add diced potatoes and cook until golden and crispy.
5. Stir in the roasted peanuts.
6. Add the soaked sabudana, salt, and black pepper.
7. Toss gently on medium heat for 3–5 minutes until the pearls turn translucent.
8. Switch off the heat and add lemon juice and chopped coriander.
9. Serve hot with fresh curd or a lemon wedge.
