My homemade Sweet and Spicy Pickles. These pickles are so easy to make and don’t have all the carbs or dyes some store-bought pickles have. Plus, I think they make a great little crunchy snack.

Ingredients:
2 16-ounce jars
2 lbs. Persian cucumbers
1 onion, sliced
2 Fresno peppers, sliced
1/4 cup kosher salt
sugar substitute = 2 cups sugar
3 cups white vinegar
1 1/2 Tbs mustard seeds
2 Tbs dill seeds
1 tsp ground turmeric
2 tsp black peppercorns
2 Tbs minced garlic
Makes 32 ounces
Per 1 oz. Serving (~8 chips):
