Rich in fiber and anti-oxidants, this Kale Salad with Quinoa and Blueberries is sure to impress! Try out this nutritious recipe from Sparrow Healthy Bites!

Ingredients:
• 1 bunch kale, washed, stemmed and chopped coarsely
• 1 cup quinoa, dry
• 2 cups blueberries
• 1 English cucumber, sliced
• 1 avocado
• 1 medium-sized beet, spiralized

Basil Balsamic Dressing:
• ¼ cup olive oil
• ¼ cup lemon juice
• 6 tbsp. balsamic vinegar
• 1 ½ cups fresh basil

Directions:
• Cook quinoa per package instructions, cool.
• Destem & shred or chop kale.
• Chop basil very fine and whisk dressing ingredients together in small bowl (may also combine in food processor to desired consistency). Set aside.
• Pour dressing on kale and stir to coat thoroughly.
• Refrigerate while preparing rest of ingredients to allow to soften.
• Spiralize beet:
o Wash & peel beet.
o Attach to spiralizer. Use thin cut blade.
o Spiralize entire beet. Cut off sections as you spiralizer to control length of beet strand.
o Add to salad
• Slice cucumber and avocado as desired & add to salad
• Toss all ingredients and serve.
