EGG ROLL IN A BOWL
This Egg Roll in a Bowl comes together in 15 minutes and is packed with protein and so much flavor.
INGREDIENTS
1 pound ground turkey
1 teaspoon minced fresh garlic
1 small onion sliced
½ head cabbage shredded (or 4 cups coleslaw mix and omit the extra shredded carrot)
1 carrot shredded
¼ cup low sodium soy sauce (or liquid aminos)
1 teaspoon ground ginger (or ½ teaspoon grated fresh ginger)
2 teaspoons sriracha (this is a hot sauce so you can add more or less, depends on your own taste)
1 whole egg, beaten
1 tablespoon sesame oil
2 tablespoons sliced green onions for garnish
INSTRUCTIONS
In a large skillet, brown the turkey until no longer pink. Drain the meat if it’s really wet. Add the garlic and sautee for 30 seconds. Add the onion, cabbage, carrot, soy sauce, ginger and sautee until desired tenderness. You can add a little water if you need more liquid to sautee the cabbage down.
Make a well in the center of the skillet and add the egg. Scramble around until done over low heat.
Stir in sriracha. Drizzle with sesame oil and sprinkle with green onions. Add additional soy sauce and sriracha if desired.
