This salad is perfect to make ahead and eat on during the week! It’s hearty, filling and healthy!
Ingredients:
Chickpea rotini pasta
canned tuna (I used 4 cans)
Vegetables (you can throw anything you have in the fridge in here!) I used:
celery
green onions
red onion
pickles
carrots
apple
homemade mayo
cracked pepper
Cook pasta according to instructions. Chop all veggies while pasta is boiling. Once pasta is cooked, drain water and transfer to large bowl and chill in fridge. Once chilled, stir in veggies, mayo and cracked pepper and you’re done! Super easy and delicious!
