Healthy Lunch (or Dinner) Ideas!

PESTO PASTA WITH SUNDRIED TOMATOES AND BROCCOLI
Ingredients:
8 oz of protein pasta
¼ cup Sun Dried tomatoes
2 cups frozen Veggies: Broccoli, zucchini, green beans, peas
Basil Pesto

Basil Pesto
2-3 cups basil
1-2 T Chickpea miso paste
2-3 tsp Garlic cloves
1T -2T Hemp hearts
Zest of one lime
½ – 1 juice of a Lime
About ⅓ cup EVOO

Directions:
1. Cook pasta according to the package. *note: for lentil pasta it usually needs to cook longer than the recommended time so taste a noodle first to make sure noodle is al dente.*
2. Drain pasta once pasta it’s done.
3. While Pasta is cooking prepare pesto by adding all ingredients into a blender or food processor. Start with the lower quantity of the ingredients and about half the oil. Mix and taste pesto, adding in more ingredients to your taste preference, using the oil to blend.
4. Add about 2 T of water and frozen veggies to a pan on medium heat Steam veggies in a saucepan with water on low-medium heat for about 5 minutes.
5. Once veggies are softened, lower heat to low and add in drained pasta and sun dried
6. Mix in pesto until pasta is well coated then remove from heat and serve.

BBQ Pulled Chicken Sweet Potato Nachos
Ingredients
2 chicken breast, cut in half lengthwise
⅓ cup BBQ sauce
2-3 small sweet potatoes
½ can Black beans
¼ cup Grated Cheese
4T oil, divided
1 tsp each: cumin, garlic powder, onion powder, chilli powder
salt and pepper to taste

Additional optional toppings:
Avocado
Salsa
Cilantro
Lime

Directions:
1.Heat oven to 375 degrees
2. Mix all the seasoning together in a small bowl and set aside.
3.Cut the potatoes into ¼ in rounds and season with olive oil and sprinkle with half of the seasoning mixture and salt and pepper. Spread potatoes out in a single layer on a pan lined with foil and bake for about 25 minutes until fork tender.
4. Season chicken with remaining mixture of seasoning.
5. Heat a pan with 2T olive oil and place chicken in pan. Cook for 5-7 minutes on each side depending on thickness.
6.Once cooked remove from the pan and let rest on a plate for a few minutes. Then shred chicken with two forks and place back in pan on low heat.
7. Mix in BBQ sauce and let chicken warm for 3-5 minutes.
8. Layer chicken on top of potatoes, then add on beans and cheese. Place back in the oven for about 5 minutes until cheese is melted.
Top with additional toppings of your choice.

Steak Salad
1lb flank steak
6 pieces of wonton or dumpling wrappers
Spray oil
Salt

Steak marinade:
⅓ cup soy sauce
¼ cup honey
1T minced garlic
2inches of ginger, grated
1T white wine vinegar
3tsp sesame oil
1 tsp onion powder

Directions:
1. Mix marinade ingredients together and marinate for at least 45 minutes.
2. While the meat marinades, heat the oven to 350 degrees.
3. Cut wonton wrappers into smaller pieces and coat with spray oil and salt. Bake for 12-15 minutes until golden brown.
4. Cook steak on medium heat for 5-8 minutes on each side, depending on how you like your steak cooked.
5. Once done, remove from heat and let rest for at least 5 minutes before slicing.
