Hi Everyone! So excited to share some healthy breakfast sandwiches with you all! These Breakfast Sandwiches are SO delicious, healthy, and easy to make! They are both vegan as well! My family and I eat these sandwiches all the time because they are so quick to make in the morning when everyone is on the go (despite our current situation!) and (again) so delicious as well. Written Recipe for Avocado Toast:

Ingredients:

One Hass Avocado
The Juice of Half a Lime
Optional: Cilantro (as much as you want!)
Black Pepper to Taste
One Teaspoon of Everything Bagel Seasoning (Contains Sesame Seeds, Poppy Seeds, Dried Garlic and Onion and Salt)
Two Pieces of Whole-Grain/Whole Wheat Bread

Directions:

1. Slice and scoop out one avocado into a bowl.
2. Squeeze the juice of half a lime in the bowl, and combine the juice and the avocado by mashing.
3. If you desire, add some cilantro (as much as you want!). Add some black pepper to taste, as well as one teaspoon of everything bagel seasoning, and combine it well. The avocado mixture is done!
4. To make the avocado toast, simply spread this mixture evenly on two slices of bread, adding some extra everything bagel seasoning on top. You can cut it half and leave it open-faced, or put the two slices of bread together and eat it as a sandwich.
5. The Avocado Toast is ready! Enjoy this meal fresh!

Written Recipe for Almond Butter and Banana Sandwich:

Ingredients:

One Ripe Banana
Two Tablespoons of Almond Butter (I used homemade, recipe coming soon!)
Four to Five Pecans (or any other nuts)
Two Strawberries OR A Tablespoon of any flavor Jam
Two Pieces of Whole-Grain/Whole Wheat Bread

Directions:
1. Peel and slice one ripe banana, crush four to five pecans, and slice two strawberries (if you are not using jam).
2. Spread almond butter evenly on both pieces of bread. If using jam, spread a tablespoon of jam on one of the pieces of bread.
3. Add the banana, pecans, and strawberries to one piece of bread, and cover it with the other piece of bread.
4. The Almond Butter Banana Sandwich is ready! Enjoy this meal fresh or pack it to go!

Written Recipe for Whipped Coffee:

Ingredients:

Two Teaspoons of Instant Coffee
Three Teaspoons of Sugar
Two Teaspoons of Either Warm Milk or Warm Water
One Quarter Cup of Heavy Cream
Optional: A Few Drops of Vanilla Extract
One Cup of Either Warm or Cold Milk (Depending on Whether You Make Hot or Cold Coffee)

Directions:
1. Add the coffee, two teaspoons of sugar, and warm milk/water to a bowl. Use a hand mixer or a whisk to beat the coffee mixture until fluffy. If using a hand mixer, it will take about three to five minutes, but it may take longer with a whisk. Transfer the whipped coffee to a smaller bowl if necessary.
2. To make the whipped cream, add the heavy cream to a bowl with one teaspoon of sugar and a few drops of vanilla extract (if you want). Use a hand mixer or a whisk to beat the cream until it reaches stiff peaks. With a pand mixer, it takes about two to three minutes, but it may take longer with a whisk. Transfer the whipped cream to a smaller bowl if necessary.
3. If making hot coffee: Put a teaspoon of the whipped coffee (or more/less depending on how strong you want your coffee) in a cup and add a cup of warm milk to the coffee. Stir it well to dissolve the coffee. You can add some whipped cream on top!
4. If making cold coffee: Put a teaspoon of the whipped coffee (or more/less depending on how strong you want your coffee) in a cup and add a little warm milk to the coffee. Stir it well to dissolve the coffee. Add some ice and about a cup of cold milk to the coffee and stir again! You can add some whipped cream and more whipped coffee on top!
5. Your coffee is ready! Enjoy it fresh!
