Hi guys, The recipe of the day is Vermicelli Upma. This recipe is quick and easy. It’s so easy that even your teenagers can make it and it’s a family favourite. It looks like noodles so looks more appealing to kids, but they pack some healthy veggies in them too. Give this recipe a go and let us know how it goes for you in the comment section below.

Ingredients

1 cups vermicelli
2 tablespoons ghee
1 teaspoon mustard seeds
2 Dry Red Chillies
2 teaspoon Chana Dal
2 green chillies (chopped)
8-10 Curry leaves
1 Tsp ofHing/asafoetida
1 onion (finely chopped)
1 tomato (finely chopped)
Salt to taste
1/2 Tsp Red Chilli Powder
1/4th of each Coloured Bell Pepper (Chopped)
1 Tbs Lime Juice
2 tablespoons finely chopped fresh coriander leaves
2 Cups of Water

Method

Roast vermicelli in a non-stick pan till brown. Remove from heat and set aside. Heat ghee(or any other cooking oil) in the same pan. Add Chana Dal, mustard seeds, Dry red chillies and Hing. Mix well and add onion and green chillies. Mix and sauté till onion are transparent. Now add tomato and cook for two to three minutes. Once the tomatoes add bell peppers and cook for 5-6 minutes. Once everything is soft add 2 cups of water and bring it to a boil. When the water boils add the roasted vermicelli. Mix, cover and cook till the vermicelli is soft and the water is absorbed. Now put the heat on high and cook until all the water is gone. Once its all soft vermicelli, add lime juice and garnish with Coriander leaves. Transfer into a serving bowl and serve hot.
