Food challenge accepted and successful!!! There were so many suggestions to choose from so I stuck with the hometown favorite, PIZZA, and just went for it! My pizza with the half pita as the crust was way tastier/crispier and comes out to only 297 calories! This means for a lunch or dinner you can have BOTH “open face” pita pizzas for just 595 calories!!
Here’s the ingredients I used:
3 cloves garlic
1 Tbsp oil
1 cup sliced red onions
1/2 cup halved cherry tomatoes
2(ish) cups of spinach
7in whole wheat pita
1/3 cup part skin shredded mozzarella cheese
Bake ’em at 450 for 4-5 minutes. Total prep and cook time was 15 min.
Breakdown:
595 calories
50g carbohydrates
20g fat
18g protein
4g sugar
*Looking back I would’ve used less olive oil and saved on some fat calories. Perhaps using an olive oil spray would have done the trick.
**You’ll see that I have out some chili flakes and shaved Parmesan on the side in case it needed the flavor… I didn’t use either but that’s always an option to bump up the flavor 🙂
