Mixed Pepper Frittata

2 tbsps Oil
1 onion
1/2 red pepper
1/2 yellow pepper
1small courgette
150g new Potatoes
6 eggs, 2 whites separated.

A vegetable frittata is close to the perfect meal! It’s full of vegetables, packed with protein and healthy fats, and works well for breakfast, lunch or dinner. This would be a great recipe for Easter, Mother’s Day or to add to your weekend meal prep.
