Ingredients
Fox nuts – 20 gm (2 cups)
Sprouted green gram – 30 gm
Onion (small) – 30 gm (chopped)
Tomato (medium) – 60 gm (chopped)
Cucumber (medium) – 70 gm (chopped)
Raw mango – 30 gm (chopped) depending upon availability
Coriander leaves – chopped
Oil – 1 spoon
Turmeric
Cumin seeds powder
Coriander powder
Red chilli powder
Cooking Method
This dish is being prepared for 2, single-serving shall have the ingredients halved.
Soak green gram a day before making recipe.
Heat the pan, add 1 spoon oil and the spices namely turmeric, cumin seeds powder
coriander powder, red chilli powder and 2 cups fox nuts. Mix well and bake 5 to 8 minutes on low flame. To check if fox nuts is properly baked, break 1 with hands. It should burst into pieces. Ensure that the fox nuts gets the spices coated over them.
Take the fox nuts in a bowl.
Now in the same pan add sprouted green gram – 30 gm without adding any oil or fat and roast it for 2 to 3 minutes. This would coat the green gram with the remaining spices leftover of earlier roasting.
Now add the green gram in the bowl of fox nuts, then add chopped onion, chopped tomato, chopped cucumber, chopped raw mango and chopped coriander leaves. If you do not have raw mango, you can skip it and mix well. Serve or eat immediately.
Since fox nuts is baked crisp and is mixed with watery vegetables you need to eat immediately to enjoy its crispiness otherwise foxnuts will become soft.
Recommended single serving in mid-morning or evening snacks.
