Ingredients:
2-3 very ripe bananas mashed
1/3 cup melted earth or smart balance or coconut oil
1 teaspoon baking soda
1 and 1/2 cups gluten free flour
1/4 teaspoon xanthan gum (unless your flour already contains it)
Pinch of sea salt
3/4 teaspoons stevia
2 large eggs beaten
1 teaspoon pure vanilla extract
Directions: Pre heat oven to 350 degrees, spray 4 by 8 inch loaf pan with cooking spray or grease with butter, mash bananas until smooth, stir in melted butter substitute, add baking soda; stir in sugar or substitute, salt, eggs and vanilla, pour batter in loaf pan and put in center rack of oven, bake 50 minutes, done when toothpick comes out clean, store in airtight container, don’t slice until completely cool.
