Palak rice/ Spinach rice/ Green rice / Vegan recipes/ Healthy cooking
This is a healthy rice recipe, very good for kids. Its not spicy, greasy or bland. It has no artificially added color. It has both flavor and nutrition and the natural green colored rice makes it look fun for a change.
INGREDIENTS:
Palak/Spinach – 200 g
Rice- 1 cup
Water- 2 cups
Bay leaf- 1 nos
Cloves- 2-3 nos
Pepper corn- 6-8
Cinnamon- 1/2 in
Cardamom- 2 nos
Onion- 1 nos, small, sliced
Garlic- 1 clove, chopped
Green chilies- 2-3 nos, slit
Lime juice- 1/2 lime
Salt to taste
Cooking time: about 30 min
Method:
1. Wash the Palak, add one cup of water n boil. Grind into a fine paste with water.
2. Soak 1 cup basmati or plain rice in water for atleast 10 min
3. Heat a deep pan, add Olive oil, add the cloves, pepper, bay leaves, cinnamon & cardamom. Fry.
4. Add the onions, garlic and green chilies. Fry until they turn golden brown.
5. Add the soaked rice and fry for two minutes.
6. Add the Palak paste , 1 cup water. Mix well. Add salt. Cook for 10 min.
7. Check if rice is cooked. In case it’s still a little raw add in some more water and let cook for another 5 min.
8. Once cooked. Cover, put off heat and leave for atleast 10 min.
9. Enjoy hot with a little ghee.
