This recipe makes 3 servings.

Ingredients
* Chicken Breast – 250g
* Nando Peri Peri Marinade – 60ml
* Avocado – 1
* Cherry Tomatoes – a handful
* Cucumber – 1/2
* Sweet Corn – 1/2 cup
* Eggs – 1 (boiled)
* Lemon Juice – 3-4 tbsp
* Extra Virgin Olive Oil – 1 tbsp
* Salt – 1/4 tsp or to taste
* Black Pepper – to taste

Method
1. Add chicken in a bowl with peri peri marinade. Mix and leave to marinate for 30 minutes minimum or overnight.
2. Bake in oven at 180 degrees celsius gor 15-20 minutes.
3. In a bowl add chicken tikka, avocado, tomatoes, cucumber and sweetcorn and mix.
4. In a separate bowl add oil, lemon juice, salt and pepper and mix. Now add this dressing into salad.
5. Add in boiled eggs and serve.
