Eating after weight loss surgery does not have to be bland or boring. This recipe makes a good dip or great topping for meats. We have even added it in our refried beans.
After weight loss surgery, you are eating smaller portions, but you still want to avoid heavy sauces. This is a light and fresh option that has plenty of flavor but is lower calorie than many dips and sauces.
If you are recently out of surgery, you may want to try it sparingly to see how your stomach reacts. You could probably puree it enough to add into some of the pureed recipes, but your stomach may not be ready for the spice. As always, follow the directions from your surgeon for those first few diet stages right after surgery.
Once you have graduated to solid foods, this is a good topping to add some flavor, without adding too many calories.
We used poblano peppers, a little jalapeno and plenty of tomatillo for a tasty salsa verde. Let us know what you think.
