Healthy vegan Sandwich recipe. Recipe that you can even include in your weight loss diet.
Vegan Mayo Ingredients :
20 – 25 cashew nuts soaked in water for 1 hour
3 – 4 small garlic cloves
½ tsp crushed black pepper
Salt to taste
3 tbsp vegetable oil
2 tbsp water
½ lemon juice
Preparation:
Add everything to a mixer jar & blend to a smooth paste. Transfer in a bowl & keep aside.
Sandwich Ingredients :
2 cups cooked chickpeas
1 small onion finely chopped
½ red bell pepper finely chopped
Handful coriander finely chopped
½ lemon juice
Salt to taste
½ tsp chilli flakes
½ tsp garlic powder (optional)
Lettuce leaves
Tomato slices
Sourdough bread / any bread of your choice
Butter
Preparation:
In a bowl add the chickpeas and mash with a fork or potato masher. To that add onion, red pepper, coriander, lemon juice, salt, chilli flakes, garlic powder & 3 – 4 tbsp vegan mayo. Mix well.
Toast the bread with butter. Place the lettuce on it. Take a generous amount of chickpeas filling. Place thick slices of tomatoes and cover it with another slice of toasted bread.
Cut in two or serve it as is.
