Instant Breakfast recipe ingredients:
Bread slices – 6 nos
Onion – 1 finely chopped
Green chilli – 1 finely chopped
Mustard seeds – 1/2 tsp
Tomato – 1 finely chopped
Turmeric powder – 1/4 tsp
Chilli powder – 1 tsp
Oil – 3-4 tbsp
Salt – as required
Capsicum – 1 finely chopped(Optional)
Sweet corn – 1/3 cup (Optional)

In a tawa, apply oil on both sides of the bread and fry until golden brown
Heat a pan on medium flame, add oil and mustard seeds
Once mustard splutters add chopped onions and chopped green chilli
Saute until it is softened
Add chopped capsicum, salt and saute only for few seconds.(Let it be crunchy)
Add chopped tomatoes and saute
Add chilli powder and tumeric powder, saute till raw smell leaves
Add the blanched sweet corn and stir only for 30 seconds
Cut the bread slices into cubes and add it to the masala
Mix well such that the masala is spread over all the beard cubes
Colourful and nutritious instant breakfast is ready. Transfer to a platter and combine it with refreshing tomato juice.
Notes:
1. The bread is toasted to avoid it becoming soggy when mixed with masala.
2. Use any vegetables of your choice.. Like grated carrots, cabbage, sprouts…etc
3. Combine with tomato juice as it is refreshing to the body.
4. Do not overcook the capsicum as it will lose antioxidants in it.
5. Use brown/wheat bread if your health conscious
