Ingredients:
1/2 cup sooji
1/2 cup jaggery powder
1/4 cup curd
1 teaspoon baking powder
1/4 teaspoon baking soda
2 tbsp olive oil
1/2 tsp vanilla essence
Orange juice
Tutti fruity
Almonds
Black raisins
Pistachios
Cashews
Choco chips
Walnuts

Method:
1. Take almonds, black raisins, pistachios and tutti frutti in a bowl. Add orange juice and let the dry fruits soak in for 1 hour.
2. Take jaggery powder in a saucepan and let it caramelize completely. Turn off the stove, add hot water, mix and light the stove again.
3. Pre heat the kadhayi for 10 minutes.
4. Take curd, oil, vanilla essence and caramelized jaggery syrup in a bowl and mix well using a whisk.
5. Put sooji, baking powder and baking soda in a sieve and sieve it all in the bowl of wet ingredients.
6. Mix the ingredients well then add the soaked dry fruits.
7. Line the cake tin with parchment paper.
8. Gently transfer the batter into the cake tin and tap it slightly to let go of air bubbles.
9. Mix walnuts, cashews, tutti frutti and choco chips with some all purpose flour. Then put these dry fruits on the cake for decoration.
10. Place the cake and bake it for 30 minutes.
11. After the cake is done, let it cool down then remove the parchment paper and cut into slices.
