Veggie-loaded egg burji – my favourite high-protein dinner.

Recipe

4 eggs
1 1/2 cups veggies of choice ( Peas, carrot, cabbage, broccoli, spinach )
1 large onion
2 medium tomato
1/2 tsp turmeric powder
2 1/2 tsp chilli powder
salt as per taste
1 handful of coriander leaves
