Turbo Prawn Fried Rice, this dish is so quick and easy to make its now my favourite healthy lunch to eat. With the addition of the curry powder this prawn fried rice is taken to another level.
Serves 1
Ingredients:-
low calorie cooking spray
7 large prawns, chopped in to bite size chunks (80g)
50g red bell pepper, diced
40g white onion, diced
1 green chilli, diced (7g)
1 garlic clove, finely chopped (5g)
1 1/2 cups cooked rice
1 tbsp soy sauce
1 tsp medium curry powder
2 tbsp water
1/2 tsp toasted sesame oil
Spring onion, garnish
Directions:-
Take a large pan/wok and heat on a low heat, once the pan is up to temperature spray with low-calorie cooking spray.
Next add the red pepper, white onion, green chilli, garlic and stir fry this for 5 minutes ensuring the onions are nice and soft.
Now add the cooked rice and stir fry this for around 4 minutes.
Now push all the rice to one half of the pan and spray the remaining half again with the low-calorie cooking spray, at this point add the prawn to the sprayed half and fry for 2 minutes not cooking them through.
Next add the curry powder to the rice and stir fry the whole lot together mixing in the prawns and fry for 2 minutes.
Add the soy sauce and the water as well as the sesame oil and finish off cooking for another 4 minutes and serve with a garnish of spring onion.
