Today’s video is an ultimate easy and fast Mac & Cheese recipe. It takes comfort food to a whole new level, and is a tasty way to check off a few servings on the Daily Dozen checklist. This recipe comes from Kristina, our Social Media Director.
The key lies in the tasty, stretchy ‘cheese’ sauce, that crisps up beautifully, particularly if you leave it under the grill for 10 or 15 minutes after you’ve taken it out of the oven. It’s a regular winner in our household – great for adults and kids alike !
INGREDIENTS
400g pasta (I used Cellentani)
4 Tbsp olive oil
3½ Tbsp tapioca starch
salt to taste
½ tsp ground black pepper
2 Tbsp nutritional yeast
¼ tsp garlic powder
1/8 tsp ground nutmeg
2½ cups (625ml) unsweetened non-dairy milk
6oz (175g) grated vegan cheese (I used the Mild Cheddar recipe from my Mouthwatering Vegan book, see link below)
